Some of our reviewed beers are bottle-conditioned and cellaring is an option for the drinker to obtain the specific
flavor that they want. As a good example, one of our highest rated beers- Bell's Expedition Stout, needs cellaring
in our view. Freshly brewed beers such as this may taste much more harsh than another more well aged batch
that you may have had. The "fresh" beer may taste overly hoppy and can have a lot of yeast in solution.
Other breweries may age the beer for you such as Flying Dog advertises on their Horn Dog Barleywine Style Ale
that they have kept it caged for a few months at the brewery before "allowing it to integrate with the public".
Obviously a benefit if you want consistency with each six pack that you buy, a detriment if the brewery doesn't pick
the "age level" that you personally like.
Some bottle-conditioned beers will state such on the label, some may not. In any event check out the following
