| Ales are made with a top fermenting yeast and fermented at relatively warmer temperatures (approx. 70 degrees F). The warmer temperature and exposure of the yeast to air creates compounds called esters and phenols. Ales are typically full bodied & have complex flavor profiles. Esters produce fruity aromas and flavors while the phenols produce spicy aromas and flavors. Ales may also have nutty, malty, and hoppy bitter flavors. |
